Dan Saladino’s written an engrossing account of some of the world’s rarest foods in ‘Eating to Extinction: The world’s Rarest Food and Why We Need to Save Them‘. In this conversation he discusses why, tells some of the stories and emphasises the need to embrace diversity in farming, culture and cuisines. He draws on many years producing BBC Radio 4’s Food Programme, field visits and research to bring alive the reality of biodiversity loss and what it means not just for food security but human cultures.
